12 oz green beans, trimmed
2 t Dijon mustard
2 T lemon juice, fresh squeezed
1 T extra virgin olive oil
1 T shallot, minced
1/4 t fresh cracked black pepper
1 T parsley, minced
Optional: slivered almonds, chopped walnuts, a teeny pinch of good sea salt
Steam or microwave the green beans for about 6-8 minutes (or until they reach that delicious crispy yet tender point, and are to your taste).
While the beans steam, combine the mustard, lemon juice, oil, shallot, black pepper, and parsley in a small bowl.
Drain the beans and place them in a pretty bowl. Toss with the sauce and serve.
