Ingredients:
2 T vegetable oil
1 cup yellow cornmeal
1 T all-purpose flour
1 1/2 t baking powder
1/4 t baking soda
1/4 t salt
1 cup buttermilk
1 large egg
Directions:
Preheat oven to 450°F
Pour vegetable oil into an 8’ cast iron skillet and place the skillet in oven to warm.
In a medium bowl, combine cornmeal, flour, baking powder, soda, and salt. Make a well in the center of the flour mixture.
Using a fork, combine the buttermilk and egg. Add the liquid ingredients to the dry, stirring just until moistened. Do not over-stir.
Remove skillet from the preheated oven and pour the heated oil into the cornmeal mixture. Mix well. Do not wipe the skillet.
Pour cornmeal mixture into the skillet and place it back inside the oven to bake for 20 minutes, or until golden brown.
