2 cups carrots, shredded
1 oz raisins
1 T lemon juice
1 t sugar

Directions:
Grate enough carrots to yield 2 cups – or if time is a factor, buy one of those nice bags of pre-shredded carrots. Use one of the larger holes on your grater so you shred instead of creating tiny minced carrot.
Toss with the raisins, lemon juice and sugar.
Refrigerate at least one hour.
Toss again, and serve.
