1 lb lean ground turkey
1/2 onion, chopped
2 (15 oz) cans Ranch Style Beans – drain a little liquid from each can
1/2 cup salsa – use the kind you like, mild, medium, or hot.
1 T plus 1 t chili powder
2 t cumin powder
10 corn tortillas
2 T butter, softened

1 yellow onion, diced
1/2 large red pepper, diced
2 stalks celery (including the leaves), diced

Mushroom, Sausage, White Bean, and Arugula Soup


2 T extra-virgin olive oil
1 medium onion, chopped
2 ribs celery, chopped – make sure you include the flavorful leaves!
1 large or two small carrots, peeled and diced
1 lb mushrooms, cleaned, sliced about 1/2 inch thick bite sized pieces – use your favorite kinds
12 oz chicken apple sausage, sliced into pieces about the same size as the mushrooms – or use your favorite smoked sausage

The amounts are very flexible. Consider the size of your baking dish as you measure.

Ingredients for a 2 Quart Casserole:

4 cups already cooked vegetables/meat in any combination

1 cup cooked noodles, thin quick cooking noodles, cooked rice, uncooked instant rice, stuffing, tortillas strips, or beans

1 1/2 cups thick liquid such as canned tomatoes, soup, or thick gravy such as a velouté.

1/2 cup thinning/seasoning liquid if one is using an uncooked veggies or quick cooking noodles or rice

2 T olive oil
6 slender carrots, peeled and chopped
2 celery stalks with leaves, rinsed and chopped
1 medium onion, chopped
1 lb ham, chopped
1 T garlic, minced
1 t dried basil
1 t dried thyme
1/2 t dried rosemary
1/4 t ground black pepper
