Recipe of the Week: The Perfect Pie Crust

Ingredients for two crusts:

3 cups flour
1 t salt
1 cup shortening or lard
1 egg
1 t white vinegar (or champagne vinegar)
5 T cold water

It’s my favorite time of the year – time for pies! Maybe you have a pick it yourself apple orchard near you or a bunch of pumpkins in your garden all ready to be harvested. If not, head to your local produce market and decide what to put inside this lovely flaky crust.

Recipe of the Week: Home-style Chicken Soup

Ingredients:

3-4 lbs bone-in chicken (use a whole chicken or just breasts and thighs)
Water (approximately 4 quarts)
1 onion, rinsed, roots and skin removed, onion chopped
The skin and top layer from an onion, rinsed, (remove the paper sticker from the grocers!!)
1 handful of parsley, rinsed, left whole
2 whole cloves (or use add 1/8 t of ground cloves with the thyme)
2 t whole pepper corns
2 bay leaves
6 large carrots, peeled and sliced
3 celery stalks, trimmed and sliced
1/4 cup celery leaves, minced
2 t dried thyme, crushed
Kosher salt to taste

Recipe of the Week: Black-Eyed Peas, Creole Style

Start the New Year off right with a southern meal designed to create plenty of luck for everyone at the dinner table. Black eyed peas form the solid foundation of a tasty southern New Year’s Day tradition. To bring financial good fortune, serve up a side of your favorite leafy green. Mustard greens are standard, but you can use any leafy green you love – spinach, cabbage, or the interesting greens from sweet potatoes.

Ingredients:

4 oz bacon, cut into 1 inch pieces
4 oz ham, cut into 1 inch pieces
1 onion, chopped
1 green pepper, deseeded and chopped
1 cup celery, chopped – include some of the delicious leaves
4 garlic cloves, minced
1 jalapeno, deseeded, and minced
2 t Creole seasoning mix
1 t dried thyme
3/4 t dried oregano
1/2 t dried basil
2 bay leaves
1 pound black-eyed peas, sorted, rinsed, and soaked
1 (15 oz) can diced tomatoes
4 cups chicken stock
Water as needed

Recipe of the Week: Cashew Chicken with Extra Vegetables

cashew chicken regular bok choyIngredients:

1 T soy sauce, low sodium
1 T Chinese rice wine
1/4 t sesame oil
1 t cornstarch
1 pound chicken breasts, boneless, skinless, cut into 1 inch chunks
2 T peanut oil
4 garlic cloves, minced
1 yellow onion, sliced into 1 inch pieces
1 large green bell pepper, sliced into 1 inch pieces
8 oz baby or regular bok choy, sliced on diagonal
8 oz sliced water chestnuts
1/4 cup soy sauce, low sodium
2 T Chinese rice wine
2 T oyster sauce
2 t sesame oil
2 t sweet chili sauce
2 t cornstarch

Leftover Turkey Tortellini SoupIngredients:

6 cups chicken or turkey stock
1/2 red bell pepper, deseeded and chopped
1 medium onion, chopped
2 t ground garlic
1 t dried thyme
1 t dried basil
1/2 t dried Mediterranean oregano
1/4 t dried rosemary
1/4 t ground black pepper
2 cups leftover turkey, chopped or shredded
9 oz cheese tortellini
2 cups tightly packed fresh spinach, large leaves torn in half
