Grilled Stuffed Jalapenos

Delicious when made with regular, low, or fat free cream cheese. Grilled Stuffed Jalapenos can be served as an appetizer or as a side dish and are a very good source of vitamin A, as well as a few other nutritional goodies which makes this is a most mindful treat. Ingredients:

10 extra-large or jumbo sized jalapenos
1 (12 oz) package cream cheese, brought to room temperature so it is soft (the spreadable version is fine)
2 t garlic powder
1 t onion powder
2 T sun dried tomatoes, drain the oil and chopped into very small bits
2 T cilantro, chopped very fine (optional, but tasty and yes, you can use 1 T dried)

Cajun Chicken Stew

Ingredients:

2 lb chicken thighs (either bone in or not as you prefer)
1 T olive oil
3 T Cajun seasoning mix
fresh cracked black pepper
1 cup prepared roux: 1/2 cup butter or oil to 1/2 cup flour
1 medium onion, chopped
1 green bell pepper, deseeded and chopped
2 stalks celery, chopped
2 cups chicken stock, unsalted
3 t garlic, chopped

Cucumber Salad

1 English Cucumber, sliced into half-moon shapes
1 thick slice red onion, cut into strips
1/4 cup rice vinegar
1 t sugar
1 pinch white pepper

Optional: 1/4 cup water

Adjust the sugar to suit you. It should be just slightly sweet. Start with 1 teaspoon and very slowly increase it if your family likes a sweet dressing.

Directions:

You can eat the skin of English Cucumbers or peel them as you prefer.

Combine all the ingredients in a bowl.

Toss, cover, and marinate in the refrigerator for at least 15 minutes.

Drain excess dressing before serving.
