Sean’s Delight, by David Gerrold

Sean’s Delight is a delicious recipe from the Hugo and Nebula award winner, David Gerrold, author of more than 50 books, several hundred articles and columns, and more than a dozen television episodes, including Star Trek’s “The Trouble with Tribbles”.

David wrote the following recipe for The Martian Child who would become his son.

So, tonight’s culinary masterpiece, hereinafter referred to as Sean’s Delight, because he went back for seconds….

The last of a roast turkey breast (they sell them at Vons), cut up into small chunks.
Some chopped white onions. (They sell small packages at Vons.)

Chicken and Wild Rice Casserole

Ingredients:

1 cup evaporated milk
1 1/4 cup homemade cream of celery soup (or 10 oz from a can)
1 cup chicken stock
1/4 cup white wine
1 1/2 T roasted garlic, minced
3 cups cooked shredded chicken
3/4 cup brown and wild rice – uncooked, not one with flavoring packets, just the whole grains
1 cup sweet red pepper, chopped
1 cup onions, chopped
1 t onion powder
1/4 t turmeric
1/4 t dry mustard
1/2 t black pepper
1 t thyme
1 t dried parsley flakes

Leftover chicken and noodles

The amounts are very flexible. Consider the size of your baking dish as you measure.

Ingredients for a 2 Quart Casserole:

4 cups already cooked vegetables/meat in any combination

1 cup cooked noodles, thin quick cooking noodles, cooked rice, uncooked instant rice, stuffing, tortillas strips, or beans

1 1/2 cups thick liquid such as canned tomatoes, soup, or thick gravy such as a velouté.

1/2 cup thinning/seasoning liquid if one is using an uncooked veggies or quick cooking noodles or rice

Seasonings of your choice, add your favorites until the mixture smells wonderful! Read More

1/2 large sweet onion, sliced to 2 inch lengths
2 large bell peppers, sliced to 2 inch lengths
2 zucchini, yellow or green, sliced into 1/4 inch thick rounds

2-3 T olive oil

Leggetts in the late 1800’s

The Leggett family tree goes back to pre-Constitution days. Later on, sometime in the mid-1800’s, my Great Grandpa bought some land in Central Illinois and became a farmer. Leggetts are still there, growing and eating a lot of really great corn.

Many generation spanning family recipes are intuitive and this is no exception. This means there are no exact measurements for the milk and crackers for the modern version of this Thanksgiving tradition, just a description of the desired texture – a thick pudding. Additional salt beyond that which is on the crackers is not required unless you ordinarily salt all of your food.

Ingredients:

1 T olive oil
1 cup brown rice, uncooked
Low sodium chicken broth to cook the rice per package directions
1 T butter, unsalted
1 cup onion, minced
1 large shallot, minced
