Crispy Garlic Croutons



1/4 cup extra virgin olive oil
6 cloves garlic, peeled and sliced in half
2-3 cups stale ciabatta roll or other dense stale bread, cut into 1/2 inch cubes

1 t dried basil

1 cup beef stock
1 lb dried split peas, sorted and rinsed
6 cups water
3 cups white potatoes (not baking potatoes), sliced into large chunks
2 T flat leaf parsley, chopped
