3-4 lbs chicken, bone in, skin on
1/3 cup olive oil
4 cloves garlic, flattened with the side of a mallet or knife and minced
Pinch salt
1/4 t ground black pepper
1/2 t dried oregano
6 red potatoes, quartered
1 sweet onion, cut into chunks
1/2 cup white wine, or good sherry
