Recipe of the Week: Home-style Chicken Soup

Ingredients:

3-4 lbs bone-in chicken (use a whole chicken or just breasts and thighs)
Water (approximately 4 quarts)
1 onion, rinsed, roots and skin removed, onion chopped
The skin and top layer from an onion, rinsed, (remove the paper sticker from the grocers!!)
1 handful of parsley, rinsed, left whole
2 whole cloves (or use add 1/8 t of ground cloves with the thyme)
2 t whole pepper corns
2 bay leaves
6 large carrots, peeled and sliced
3 celery stalks, trimmed and sliced
1/4 cup celery leaves, minced
2 t dried thyme, crushed
Kosher salt to taste
Pinch of rubbed saffron threads

Stephens Smothered Pork ChopsIngredients:

6 (1 inch thick) bone-in pork chops
Salt and pepper to taste
2 T vegetable or your favorite high heat oil
1 red bell pepper, deseeded and sliced
1 yellow (or orange) bell pepper, deseeded and sliced
1 green bell pepper, deseeded and sliced
1 large sweet onion, thickly sliced
1 lb cremini or button mushrooms, rinsed, dried, and thickly sliced
2 T soy sauce, low sodium

Three Pepper RatatouilleIngredients:

1 T fresh parsley, chopped
3 T olive oil
black pepper to taste
1 medium eggplant (3 cups), cubed, leave the skin on
1 cup zucchini (green, yellow, or mixed) chopped
1 red bell pepper (or orange), seeded and chopped
4 banana peppers (hot or mild), seeded and chopped

Anything Leftover Vegetarian Casserole

The amounts are very flexible. Consider the size of your baking dish as you measure.

Ingredients for a 2 Quart Casserole:

4 cups already cooked vegetables/beans in any combination
1 cup cooked noodles, thin quick cooking noodles, cooked rice, uncooked instant rice, stuffing, tortillas strips
1 1/2 cups thick liquid such as canned tomatoes, soup, or thick gravy
1/2 cup thinning/seasoning liquid if one is using an uncooked veggies or quick cooking noodles or rice
