Ingredients:
1 cup raw almonds
2 t olive oil
1/8 t salt
1/8 t black pepper
1/2 t dried rosemary, crumbled
Directions:
Preheat the oven to 325º F
In a small bowl, combine the nuts with the oil, salt, black pepper, and rosemary and toss to thoroughly coat.
Pour onto a small baking sheet and spread in one layer and place in the oven – a toaster oven works just fine.
Set the timer for 15 minutes. Do not leave the poor almonds as near the end their is a distinct possibility of burning them. Stir every five minutes. When they are a lovely deep brown and cracked a bit, scrape them into a pretty bowl.
Now the hard part – wait a few minutes. They are so hot right now they will burn your mouth. After they cool just a tad, but are still warm, taste one and adjust the seasonings as you see fit.
Enjoy them as mindfully as you can.
You will need more tomorrow, so try making more, all with different seasonings: BBQ rub, Cajun seasoning, bacon salt, garlic, cayenne powder, etc.
