1 pound hamburger
1 1/2 large onions thickly sliced (or two big onions if you want to make Dad happy)
2 large baking potatoes, washed, peeled, and sliced
1 (15.25 oz) can corn
2 (14.5 oz) cans tomatoes, diced
3 pinches salt
1/4 t ground black pepper

When my Mom became unable to cook, my Dad stepped up to the plate and learned to make a few dinners that were all based upon hamburger, corn, and tomatoes – foods that form the foundation for many a farm style meal in Central Illinois. This dish is his special favorite. To bring out Dad’s famous crooked grin, ask for extra onions.
In a very large skillet set over medium heat, brown the hamburger and drain the grease. Spread out the cooked burger in an even layer.
Add a nice thick layer of the onions and then the potatoes. Top that with the corn and finally, the canned tomatoes.
Salt and pepper the layers to taste as you go.
Bring the whole to a gentle simmer, cover and cook about an hour.
Remove the lid and continue to simmer until the liquid has reduced a bit – about half an hour. No stirring is necessary.
My Dad cooks everything an hour and a half, but if the potatoes are softened before then, go ahead and call it done, it will just be a little soupy.
Fight over who gets the most onion, and enjoy with a large salad. Dad’s Layered Dish is excellent the next day.
