Pork chops smothered with Mushrooms in Madeira Sauce

Ingredients:

1 lb button mushrooms, rinsed, dried, and thickly sliced
1 T olive oil
Twist or two of kosher salt
4 (3/4 – 1 inch thick) pork loin chops
A few twists of salt
1/4 t white pepper
1 T butter
1 T olive oil
1 large shallot, minced
3/4 cup Madeira
1 T fresh parsley, finely chopped or 1 t dried
Several shakes of ground white pepper

Rigid diets do not agree with me – I tend to get rather obstinate at times and do not like being told what I have to do. So, I will tweak my way to a weight that is sustainable and healthy for me by using questions instead of silly rules.
