bok choy WM 350Bok choy is a type of Chinese cabbage with dark leaves attached to a base that looks rather like celery.

It comes in a number of varieties. Baby bok choy is a variety that I particularly love, one that is available at many grocery stores. To see all the wonderful varieties of bok choy, take a tour of an Asian grocery store. Ask questions if you are unsure of flavors and use.

Bok choy is delicious, easy to cook, wonderful in stir fries or sautés, low in calories, and very good for you.

2 cups onion, chopped
1 red bell pepper, deseeded, deveined, and chopped
1 cup celery, chopped – include some of the delicious leaves
2 t ground ancho chile pepper
1 t ground guajillo chile pepper
1 t cumin
1/2 t ground black pepper
1/4 t ground chipotle chile pepper, or to taste
2 (14.5 oz) cans diced tomatoes
1 (4 oz) can green chiles, chopped, hot or mild
2 cups vegetable broth

Cauliflower and Cheese

1 large organic head of cauliflower (or 2 small)
1 1/4 cup milk (1% or whatever you have on hand)
8 oz good aged cheddar cheese
3 T butter
3 scant T flour
1/2 t good quality dried mustard such as Colman’s or Watkin’s
1/8 t nutmeg
black pepper to taste
