Spicy Veggie Mountain


2 t habanero olive oil
1/2 cup onion, chopped
1/2 cup sweet red bell pepper, chopped
1 jalapeno, deseeded and chopped
1/4 t turmeric
Cracked black pepper to taste
2 cups spinach, torn
1 t balsamic vinegar

Use your favorite oil. I love the combination of habanero oil with turmeric. This dish is also very good with hot or sweet banana peppers.


Prep all the veggies and set out all the other ingredients.

In a small pan that was set on medium high heat, add the habanero oil.

When the oil shimmers, add the onion and peppers, sauteing until the veggies start to brown.

Stop short of caramelizing as this dish needs a bit of crunch.

Sprinkle with turmeric and black pepper. Saute another minute or two.

Add the spinach in batches, stirring until the spinach is incorporated and reduced in size.

Add a splash of vinegar, continue to cook over medium high one minute and then plate.
