5 cloves of garlic, minced
1 1/2 T olive oil
Teeny tiny pinch of sea salt
2 t sesame oil
1/2 t hot red pepper flakes
15 oz fresh spinach, torn
4 T Parmesan cheese
Options:
1 t balsamic or rice vinegar served at the table for those that love a bit of a tang, 1 T sesame seeds
Directions:
Heat olive oil in a large skillet over medium low heat. Add garlic and sauté gently for a few minutes. Do not let the garlic brown. The purpose is to allow the garlic to infuse the oil with garlicky flavor.
Add the sea salt, sesame oil, and hot red pepper flakes. Sauté gently for another minute.
Raise the heat to medium high. As soon as the pan is hot, add the spinach. Don’t worry that it is a great mountain of spinach. The spinach will quickly reduce in size. If your pan is not large enough to hold it all in one addition, add half the spinach and then add the rest once the first half begins to reduce.
Saute until the spinach is fully reduced. This just takes a few minutes so make sure the rest of dinner is ready first.
Taste and adjust the seasonings. Delicious served as a side to a baked sweet potato!
You may be used to more salt, if so add it.
Or you may love hot foods and will increase the hot red pepper – or add Tabasco for even more zing!
