Savory Quinoa


2 T butter
1/2 c onion
1 T garlic, minced
1 C quinoa
2 C chicken stock
1 T parsley, chopped
1 lemon, juiced


In a medium pot, sauté the onion in the butter over medium heat until the onion softens.

Add the garlic and stir for 1 minute.

Add the quinoa, stirring frequently until the quinoa browns a little – about 5 minutes.

Add the stock, bring to a boil, reduce to a simmer, cover with a tight lid, and cook for about 15-20 minutes, or until the liquid has been absorbed.

Toss with parsley and lemon juice.

Serve immediately with just about anything!

      a good recipe is a template from which you create. It sounds like you are going to make deliciousness with this idea! I love the idea of mushrooms, Brown them a bit before adding. Or you might consider stirring in nuts – walnuts or pistachios might go very well here. Go for it!
