Blue Cheese and Caramelized Onion Steak Sauce

Ingredients:

1 T salted butter
1 T olive oil
1/2 sweet onion, sliced
8 oz mushrooms, rinsed, patted dry, and thickly sliced
Pinch of salt
1/2 cup heavy cream
1/3 cup blue cheese crumbles
1 t Worcestershire sauce
Fresh cracked black pepper to taste

Directions:

In a skillet set over medium-high heat, melt the butter and oil.

Add the onion and mushrooms slices with a pinch of salt. Stir every now and then until the vegetables brown and the mushroom juices largely evaporate.

Reduce heat to medium-low and finish the caramelizing the vegetables, approximately for 20 minutes. Stir infrequently.

Reduce heat to your lowest setting. Add the cream. Stir for approximately 3 minutes, warming the cream until it has taken on a light brown color from the vegetables.

After the cream is very warm, add the Worcestershire sauce. Stir for one minute.

Add the blue cheese, stirring until the cheese melts.

Taste and add black pepper or more blue cheese to suit your taste.

Serve spooned over freshly grilled steak and serve with a colorful side salad.
