2 yellow squash
2 green zucchini
8 oz mushrooms
1 pint cherry tomatoes
1 red bell pepper
1/2 cup lemon juice
1/4 cup olive oil
1 t oregano
1/2 t fresh cracked black pepper
Optional seasonings: paprika, thyme, or Paul Prudhomme’s Magic Vegetable Seasoning.

Use your favorite combination of veggies. Those listed are my favorites!
Rinse, dry, and cut the vegetables into large chunks – 1 inch works very well for most things. Don’t bother cutting the cherry tomatoes. If you buy small button mushrooms they can remain whole as well.
Thread the veggies onto the grilling skewers and place on a platter.
Mix the marinade and baste the veggies.
Let the skewers sit for half an hour while you go start the coals.
Grill for approximately 12-15 minutes, turning a couple times only until the veggies are cooked to crisp tender and browned.
Enjoy mindfully all by themselves, over rice, or with your favorite sauce.
