Steamed Whole Fish

Ingredients:

Bamboo steamer, or other steamer basket
2 lettuce or cabbage leaves
1 whole fish per person
Salt
Pepper
1 T Ginger, peeled and julienned
1 Green onion, julienned
Shiitake mushrooms
Lime quarter
Optional: your favorite hot peppers

Directions:

Line the steamer with lettuce or cabbage leaves. Add the cleaned fish seasoned with salt and pepper, top with julienned ginger, green onion, and shitake mushrooms. If using hot peppers, place them on top of the fish.

Place 2 inches of water in a large pot or wok. Heat the water to where it is starting to simmer. Place the bamboo steamer in the pot, cover, and steam for 10 minutes. It is done when the fish turns opaque.

Squish a bit of lime juice over the fish and serve immediately. Delicious with rice, long green beans, and a lovely salad.
