1 cup plain Greek yogurt
3 green onions, sliced (or 1 T sweet onion minced)
1 T fresh mint, finely chopped
2 t fresh tarragon, finely chopped
1/2 t dill, dried (or 1/2 T fresh)
2 t ground garlic
1 T extra virgin olive oil
1 1/2 T lemon juice, fresh squeezed
Optional: Salt, pepper, and hot red pepper flakes to taste
Directions:
Slice the onion and herbs.
Squeeze the lemon.
Measure all the ingredients and place in a small bowl.
Stir well and chill in the refrigerator for two hours.
Delicious with lamb, chicken, or fish.
