Orange Blueberry Sauce with Grilled Angel Food Cake

250-blueberry sauceIngredients:

2 (10 oz) packages of frozen wild blueberries
1/3 cup orange juice
1/3 cup sugar
2 T lemon juice
1 1/2 T cornstarch
1 Angel Food Cake

Grilled Angel Food Cake

Sauce Directions:

Combine blueberries, orange juice and sugar in a medium saucepan. Cover and gradually bring to a boil over medium high heat, stir frequently. When the mixture comes to a boil, reduce heat to low, and simmer for four minutes.

While the sauce is simmering, combine the lemon juice and cornstarch in a small bowl. Add this to the berries after the four minute simmer is done. Return to a boil for a minute or two stirring often.

Remove from heat and enjoy right away, or cool and put in the fridge for reheating up to 3 days later.

Use the sauce on anything you want – pancakes, oatmeal, cakes (even the ungrilled type), ice cream, cheesecake, or eat it out of hand with a spoon. It is so lovely – and remember, blueberries are good for you.

Slice the cake and lay each piece on the grill. Watch carefully as the sugars will flame on if they are left too long.

It only takes a minute or two on each side to make lovely brown caramelized sugar marks and warm each piece.

Serve with the warmed sauce.

This is not only very low calorie, and simple to make, it is a company pretty dessert!

No grill? No problem. You can use your toaster over for a similar effect.

You won’t have the grill marks and smoky flavor, but we are talking toasty warm cake!
