Spicy Thai Salad Dressing

ThaiSaladDressingIngredients:

1/4 cup of lime juice, freshly squeezed
2 T fish sauce
2-5 Thai chilies
10 garlic cloves

Optional: a pinch or two of sugar

Spoon Mage Note:

Substitute jalapeno or Serrano chilies for the Thai chilies. Or simply buy a jar of ground hot chilies. In this picture, the dressing was made with jarred ground hot garlic chilies.

Directions:

Place the lime juice and fish sauce in a small bowl.

Chop the chilies and garlic. Grind using a mortar and pestle or smash using the flat side of a wide knife. Scrape into the lime juice mixture.

Whisk together. Dip a cabbage or pepper strip in to taste and adjust to suit you.

Some of you may want to add a bit of sugar to the mixture. Try mixing in a teaspoon and then taste again.

Others will want it to be a great deal spicier, add as many chilies as you like.

This salad dressing should make you sweat!
