Chile flavors range from mild to very hot. Ancho and guajillo are two mild chiles. Chipotle and hot New Mexican are two very spicy chiles. Some chiles, like my favorite the Hatch Chile Pepper, come in both hot and mild! Tasty chiles can be used fresh or dried and ground. Use the Scoville Scale to help you select the right pepper for you. The higher the unit, the hotter the pepper! There are plenty of mild peppers to choose from, just look lower on the scale. Mild and Light Chili Mac



1 T extra virgin olive oil
1 medium onion, chopped
1/2 sweet red bell pepper, chopped
1 lb lean ground sirloin
1 T plus 1 t chili powder
1 T garlic powder
1 1/2 t cumin
1 t dried cilantro, or 1 T fresh, minced
1/2 t fresh cracked black pepper
1/2 lime, squished
2 (16 oz) cans pinto beans, drained and rinsed
2 (10 oz) cans chopped tomatoes with mild chilis – Rotel or Hatch work well, but a store brand is just fine
1 1/2 cups elbow macaroni
Water – measure by filling one of the empty tomato cans with water once and the second empty tomato can twice.
Garnish: extra cilantro, shredded cheddar cheese, chopped raw onion, and hot sauces

Turkey and White Bean Chili


1 T olive oil
1 medium onion, chopped
1 sweet red pepper, de-seeded and chopped
20 oz ground turkey, lean
20 oz ground turkey, extra lean
1 T plus 1 t garlic, minced
2 T plus 1/2 T Gebhardt Chili Powder
2 3/4 t ground cumin
1/4 t ground black pepper
1/4 t chipotle chili powder (omit if you are a spice wimp and increase if you love it hot)
3 T all-purpose flour
3 T tomato paste
1 (4 oz) can Hatch chilis (hot or mild as you prefer)
3 C low sodium chicken stock
3 (15 oz) cans Great Northern Beans, drained and rinsed
2 T cilantro, rinsed, dried and chopped

Optional garnish: more chopped cilantro, green onions, avocado, tomatoes, and jalapenos

Red Chile and Turkey Stacked Enchiladas


Serves 8


1 recipe Red Chile Sauce, divided use – set aside 1/2 cup for assembly, the rest goes into the meat and bean sauce
18 corn tortillas
1 T olive oil
1/2 onion, chopped
20 oz ground turkey breast, 99% lean
1 (15oz) cans black beans, drained and rinsed
1 C corn, fresh, frozen and thawed, or drained from a can
2 t chili powder

2 pounds pork tenderloin, well-trimmed of fat and cut into 1/2 inch chunks
1 T chili powder
1 t garlic powder
1 t oregano, dried
