Heavy on the Veggie Breakfast

Breakfast BurritoIngredients:

2 t olive oil
1/2 cup sliced onions
1/2 cup sliced sweet red pepper
1/8 t fresh cracked black pepper
1/4 t turmeric
3 cups baby spinach, rinsed, dried, and the larger pieces torn in half
1 egg
1 tomato, sliced or chopped

Optional: sliced mushrooms, kale, collard greens, shallots, grated carrots, zucchini ribbons, peas, and tofu – or your favorite protein replacement for the egg

Spoon Mage™ Note:

Instead of oil, “steam sauté” by adding a tablespoon of water at a time as the veggies cook, adding more water only as needed.

Directions:

Prep all the ingredients.

Over medium heat, add the oil to a small non-stick pan. Add onions and sweet red pepper. Sauté until they begin to brown. Add the black pepper and turmeric, stir to incorporate. Add the spinach in batches, stirring until it wilts. Plate and cover with a paper towel to keep warm.

Cook the egg as you prefer – scrambled, boiled, over easy, or poached. Plate the egg with the veggies.

Slice the tomato and add to the plate for superior deliciousness and a healthy way to start your day!
