Salt to taste
Spoon Mage™ Note:
All the seasonings in this mix are adjustable to suit you. Make it this way first and use it where you would ordinarily use a tablespoon of a purchased chili powder mix.
The goal is not necessarily to replicate the taste you love (although you can tweak this until you do). The goal is to create a delicious seasoning mix you will use and love.
I do not add any salt to mine, but I do add more cayenne and sometimes a few other types of heat bearing chiles like chipotle. Heat is one way of replacing salt.
As you adjust the seasonings, keep proportions in mind. For each tablespoon of chile powder, add 1 teaspoon of cumin powder. Too much cumin sets that flavor on top of the other flavors, hiding them when it should be working with them.
