Shirazi Salad

shirazi1Enjoy this colorfully and tasty salad with just about any meal.


2 large tomatoes, diced
1 English cucumber (or 2 small cucumbers)
1/2 large red onion, diced (less if you are not an onion lover)
1 T lemon juice
1 T olive oil
1 T fresh mint leaves, chopped
1 T fresh cilantro leaves, chopped
A bit of fresh ground pepper


Prepare the vegetables and place in a large bowl, add the rest of the ingredients and mix well.

If you like salt, a little bit of sea salt would be just fine.

Enjoy immediately, or make it in the afternoon and let the salad marinade for an hour before dinner.

Usually one does not refrigerate tomatoes as it alters the flavors, but in this salad it works just fine.

Serve as part of a gorgeous Mediterranean meal nestled next to a beautiful lamb chop and spinach couscous.
