Turkey and Ricotta Burger

Ingredients:

1 (20 oz) package of lean ground turkey
1 cup onion, chopped finely
2 t olive oil
1/2 cup ricotta, low fat
2 t garlic
1 t smoky paprika
2 t good quality yellow mustard (I used Coleman’s English mustard)
1 t Worcestershire (or low sodium soy sauce)
Crushed red pepper flakes to taste
Fresh ground black pepper to taste

Bracciole of Beef

1 1/2 cups dried plain bread crumbs
1 cup Romano cheese, grated
2 t garlic powder
2 t dried parsley flakes or 2 T fresh chopped parsley
1 t oregano
1/4 t ground black pepper
6 large wafer thin slices of beef, approximately 1 1/2 lbs
2 T olive oil
6 slices ham
6 slices Swiss cheese
1 cup pasta sauce
4 oz fresh mozzarella cheese, sliced into six pieces

Spanish RiceIngredients:

1 1/2 cups long grain rice
1 1/2 T olive oil
1 small sweet onion, chopped
1 medium sweet pepper (bell, red, banana, etc), deseeded and chopped
3 large garlic cloves, peeled and minced
1-2 Serrano peppers, rinsed, deveined, deseeded, and finely minced
1 T chili powder
2 t Spanish paprika
2 t ground cumin
1/2 t oregano
1/4 t fresh ground black pepper
2 t balsamic vinegar
1 (15 oz) can tomatoes, chopped
2 1/4 cups vegetable stock

1/2 red pepper, deseeded and chopped
